Black Garlic truffles !
Simply add 8 cloves of Black Garlic to the heating cream when making your favorite chocolate truffle recipe !
As it has a very sweet, liquorice flavour it goes surprisingly well with sweet things !
Ingredients -
half teaspoon caraway seed
1 tablespoon fresh Thyme
10 cloves Black Garlic
30g butter
Method-
Mince garlic with caraway seed and thyme in a pestle and mortar to form a paste. Heat butter in a small pan until it just starts to brown , then add the paste and cook for 2 mins.
Simply stir into cooked veg like mangetout , sprouts , peas etc . Season and add lemon juice if you like !
Scapes are the `flower` buds and stems of the garlic plant which contain tiny bulbils. Elephant garlic produce flowers , but a true scape is from our our hardneck garlic varieties. Available online when in season (April to June)
Ingredients-
250g of chopped garlic Scapes
half cup pine nuts or equivalent
125ml oil approx
35g grated parmesan
salt and pepper
Method-
Simply combine all the ingredients (except parmesan) in a blender , adding the oil slowly , until you get your desired consistency of a pesto. Then add the cheese. Makes 5 tubs approx, but can be frozen. A superb fresh garlic taste; add to cooked pasta , on toast , pizzas and sauces !
